Sodium citrate is an organic compound with colorless orthorhombic columnar crystal. It is stable in air, soluble in water and glycerol and slightly soluble in ethanol. Sodium citrate is used in cold drinks to reduce acidity and improve taste. Adding this product in brewing can promote saccharification, the dosage is about 0.3%.
